Payments made at the Post Office usually take about 10 days to reach your Council Tax account. We have no way of knowing you have paid until the money is actually on your Council Tax account, and reminders can be sent as soon as a payment is 7 days overdue. They are generated automatically, so even if you have paid regularly, if any payment is late you may get a reminder.
If you want to continue paying this way the best thing to do is pay at least a week before your instalment date.
